Attack of the Broccoli

I just made my "salad" for lunch today which consisted of broccoli slaw mix and homemade chia seed dressing and I totally just got attacked by my broccoli!!!  I opened the bag and it popped out and jumped all over my desk.  The tech in the shop with me today asked me what I was laughing hysterically about, my response..."I've been violated by a vegetable!" and laughed even harder.

so now that I've said something about Home made Chia Seed dressing this is how you make it...

Chia Seed Dressing:
2 cups Extra light extra virgin olive oil
2 Tbsp apple cider vinegar
2 Tbsp agave syrup
1-2 tbsp chia seeds

Once in the container, shake till your little hearts content!  It tastes kind of like sweet italian dressing.

On the workout front....I RAN A MILE!!!  Mucho excited about this!  Granted, I'm no marathon runner so, it took a while but I did it.  What did I learn from this?  I need new tennis shoes! :)

I go back to the Dr. today to find out the results from the tests but he has a hunch that I've got something going on with my adrenal glands.  When he started describing something called "adrenal fatigue" I looked at him and told him he was basically rattling off all my symptoms and a book to my life!  Finally somebody that is listening to me and not just giving me the "you're fat, loose weight" speech. My response to this ? "No shit Sherlock, that's why I'm coming to you",  I'm doing everything that every one tells meI eat fantastically work my butt off and nothing is happening but you don't seem to listen so...next!  This guy is actually taking what I'm saying into consideration which makes me happy.  I'm not in search of a magic pill that makes the weight instantly dissapear.  I'm not stupid I realize that this is not how reality works but I would like to find out why, when the work is put forth I'm not getting the results that 90% of the world gets ya know?  Hopefully we get somewhere today....fingers crossed!!

So what did you guys get for loot for Xmas???  Me?  I got a brand spankin new Cards jersey with my man Freese's number!!! World Series Patch and all.  My pop ordered it for me about a week after they won the series.  Loot catch number two= new sewing machine.  I will post pics, but this thing is awesome!  It has like 200 different stitches.

What to do?

Hey Everyone!

Long time no see :)  Sorry bout that.  Little stressed here lately.

Pop's doing very well considering.  He's actually kept up with the non-smoking...SO PROUD!!!

I've been rocking the Paleo diet still and still having issues loosing weight.  I'm going to see a very highly recommended Nutritionist/Chiropractor on Wednesday to see what's up.  Apparently he and Lauren (my trainer) have been chit chatting and I'm a conundrum! LOL.  Does this surprise anyone that knows me?  NOPE.  I'm not normal so why should my body be any different.  He can't wait to meet me and do some testing.  Common thinking at the moment is that my Cortisol: Testosterone ratio is funky along with high blood pressure in there somewhere is making this very difficult.  So here's to hoping we can figure this out because I'm about sick and tired of working and doing the same as everyone else and having no results to show for it other than increased strength.

Last night at Miss Lauren's:
10 minutes on treadmill at 3.3 and 8 incline
20 "drop it like it's hot" squats lol
20 modified pushups
20 eagle sit ups
1 minute on treadmill with 30 lb medicine ball at 3.3 and 8 incline
20 underhanded rows with 40 lbs on barbell
20 "drop it like it's hot" squats
20 eagle situps
1 minute on treadmill with 30 lb medicine ball at 3.3 and 8 incline
20 modified pushups (when I said modified I mean that she put a bar on the torture device so I wasn't on the       ground but could get lower to the bar before pushing back up)
20 "drop it like it's hot" squats
20 eagle sit ups
1 minute on treadmill with 30 lb medicine ball at 3.3 and 8 incline
cool down on treadmill at 2.8 and 0 incline

I call the silly things "drop it like it's hot" squats because this is totally what I feel like I'm doin!  Lauren makes a station out of a step with like 5 units under it to raise it roughly 1 1/2 foot off the ground and I have to keep correct squat form while getting low enough that my ass touches the step behind me.

It was kind of nice to get this change on the pushups because I feel like I got more out of these now that I have the ability to get closer to the ground/bar and actually get the muscle working that they are inteded to work.


At the home front we purchased the niftiest contraption known to man...the Actifry!
New recipe for those of you that have this dude!  If you don't have it I would recommend getting it,  you can "fry" things with less that 2 TBSP of oils.

Healthy Sweet and Sour Meatballs



1 Bag of Fit and Active Turkey Meatballs (found at Aldi's and they are Gluten Free!!)
1 Bag of fresh broccoli florettes
1/2 large vidalia onion
20 chopped mushrooms

For the Sauce:
1 cup ketchup (I used home made Paleo ketchup)
1 cup apple cider vinegar
1/2 cup Stevia baking blend
1/4 cup honey
(you may have to alter to your tasts, this tends to have a tart kick to it but that how I roll)
1 Tbsp corn starch for thickening
*mix all together very well to get out the lumps in the cornstarch

Toss all these items into the ActiFry and cook for 20 minutes
Holy poo is this stuff tasty!

Tonight is Peanut's Xmas program at Daycare so you can be sure to see pictures!! :)
Can't wait to see the little stinker perform.  She's been busting out into song at random times because she so proud of knowing all the words.  If I try to join in I get told to stop singing, not because I'm off tune or anything but because I'm not singing the same words that Miss Danielle taught her.  LOL  Kid is a riot sometimes.  She did however get her first " I'm in trouble for a potty mouth" experience at her Dad's yesterday.  She didn't want him playing in her room because she was playing with PaPa and told her Dad to "get your ass out of here"!!!  Needless to say she got in a smidge bit of trouble and I'm kinda happy that she didn't do that to me because I'm pretty sure I wouldn't be able to keep a straight face.

I need to be in Time OUT!

It's a Monday,  lets just begin with that statement :) lol  Needless to say Monday's entail both me and my employee apparently speaking alien language to our customers because none of them seem to listen.  It also seems to bring the oddest phone calls and things happening with peoples computers.  Computer lesson from the pro's today?:  Don't feed you computer popcorn...it doesn't like it!  I just finished taking a laptop completely apart to find out the cause of their problem was popcorn kernals and shells stuck in various parts of the hardware.

It's now roughly 2 p.m. and I'm already in desperate need of a time out (or caffeine,  this will do nicely too).  Other than that we had a great weekend with a belated Gluten Free Thanksgiving with all the kids!!! My psuedo brother/ his fiance and his kiddos came over and we had Thanksgiving will all 4 kiddos present.  Present at the table was Turkey (duh), freezer corn (best corn EVER!), Kinikwick rolls, home made Strawberry preserves,  GF Stuffing, Green bean casserole, and GF mac and cheese for the kids.  We also made pumpkin spice mini loaves for dessert!

For mini loaves:
1 package of this stuff:

make as directed and add about 1 can of pumpkin puree.

For Strawberry Jam:
  • 1 pound fresh strawberries, hulled
  • 2 Cups Splenda baking mix (or you could use regular sugar but we have diabetics as well)
  • 1/4 cup lemon juice
In a wide bowl, crush strawberries in batches until you have 2 cups of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, splenda, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). Transfer to hot sterile jars, leaving 1/4 to 1/2 inch headspace, and seal. Process in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate. 


I'll have the recipe for the stuffing once I get it from Ann.  More recipes to come this week.  They might be kinda bad but it's Xmas cookie and pastry making time!  It's time for Petissa Bread, Struedel, and Baklava.  I'm going to be sick as a dog eating it but I've never gone a holiday season without having at least the baklava.  The only thing missing will be Grammy.  She's the one who taught me to cook and how to perfect these special recipes.  I will however be starting the tradition (carrying on the old one) of being the baker and teaching my daughter and hopefully neice how to make these. 


In the realms of working out, I'm totally on a Zumba kick when not working out with Lauren.  I've found a way around buying all the DVD's and getting bored with them from doing the same thing over and over again.  I've made a channel on YouTube and searched for Zumba Routines and made a favorites list and teach myself the routines....It's way fun.  I have to do this unless I want to drive an hour to an actual Zumba class which most definitely is not going to happen at 9 at night after I've put the Peanut Monster to bed.  I'm hooked though!!!!!  I will not be putting  up a video of this as I'm sure I look like a complete MO-RON :)
